I’m not a huge breakfast person. Don’t get me wrong I do love some breakfast foods like cheesy scrambled eggs, omelets, donuts, oatmeal and waffles… but I don’t like eating when I wake up. I need a solid hour or two before I can even think about eating. So I don’t plan that time in when I’m getting ready in the morning. But then when I get to work, an hour later I’m starting to get hungry. So these are 3 healthy breakfast choices when you don’t have time in the morning to make yourself a full breakfast but still want something to eat.
The first thing to note all these things are items to make ahead of time, because if you don’t have time in the morning to eat… you probably also don’t have time to make something either. So if you fall in both boats, these meals are for you!
Turkey, Egg, and Cheese Mini Quiche by Happy Mothering
Mini Quiches are probably some of the easiest things to prepare in advance. Unlike most people I’m not a fan of ham so I opt for either turkey or chicken. These are also super easy to take on the go and eat while at the same time being super healthy. Especially if you add in some spinach or tomatoes. So yummy!
Breakfast Popsicle by Caramel Potatoes
A good and simple breakfast that can easily be prepared then taken on the go are breakfast Popsicles. All you need is your favorite fruit sliced up, a Popsicle mold, and some yogurt. Personally I love blueberries, strawberries, and grapes. Though Kiwi is another great choice especially if also using strawberries.
Fruit and Yogurt Breakfast Parfaits by Iowa Girl Eats
These are especially healthy for you and you can make them any way you want. Including adding seeds or quinoa though I’m not a fan of either so I just stick with the fruit and yogurt. You can mix them up if you want or enjoy each in layers. Plus they can be sealed in mason jars in advanced then taken when you need a breakfast on the go.
Pink Surprise Breakfast Smoothie by Cafe Johnsonia
Smoothies for me are the best option for a quick breakfast. As I can drink it on the drive and it doesn’t feel like I’m eating. So it’s a lot easier to stomach. I’ve made this recipe multiple times from Cafe Johnsonia as we have a smoothie maker at work. It’s so delicious!
